炒飯
A quick and satisfying classic fried rice. Best made with day-old rice.

- 米 200 g
- 卵 2
- 塩 some
- 食用油 1 tbsp
- 醤油 1 tbsp
- ごま油 1 tsp
- 塩 to taste

Cook 米 in a rice cooker, then spread on a tray to cool for at least 30 minutes.

Beat 卵 with a pinch of 塩 in a small bowl.

Heat 食用油 in a wok over high heat until smoking.

Pour in the egg mixture, scramble briefly until just set, then push to the side.

Add the cooled rice, breaking up any clumps, and stir-fry for ⏱ 2 min.

Drizzle 醤油 and ごま油 around the edge of the wok.

Toss everything together for ⏱ 1 min, season with 塩, and serve.
